Owner chef Brent Holleman, with over 24 years of classical
training and experience in France, Switzerland, and
the U.S., creates a diverse menu of international fare
prepared from only the freshest ingredients and served
in a warm, friendly atmosphere. Your experience

Nestled in the majestic Rocky Mountain playground of
Steamboat Springs, a world traveled Chef has created
one of the most intimate fine dinning experiences anywhere.
Drawing from his own experiences in the great
kitchens of Europe, Chef Brent Holleman has recreated
to cozy atmosphere of the European alpine bistros of
yesteryear. With a menu that features such European
delicacies as Wiener Schnitzel and Veal 'Zurich', the
menu is as convincing as the setting. For Brent
the restaurant business was nothing new. Being
a third generation restaurateur, Brent has been in the
business long enough to enjoy several distinct stints
in some of the best kitchens in the world. Kitchens
such as the famous Sazerac in New Orleans, Guido's in
Aspen, the ultra exclusive Greenbrier Resort in
West Virginia, and the Chef's personal favorite under
Master Chef and widely considered the best chef in the
world, Paul Bocuse in France. He was even trained
at the prestigious Culinary Institute of America in
New York. Along with these lofty laurels comes
a drive and desire to continually produce the highest
quality dishes night in and night out. You see,
